The festive season is here, and we are marking a wide range of festivals back-to-back. After Navratri, Durga Puja, Dussehra and Karwa Chauth, now we are all set to celebrate one of the biggest festivals of the year – Diwali. This year, Diwali falls on October 31, 2024; meaning, we just have a few days left for preparation. In fact, if you look around, you will find people decorating their houses with diyas, flowers and rangoli to celebrate the festival of light with utmost grandeur. Another thing that has a major role to play during Diwali is food.

During this time of the year, our kitchen pantries are stashed with a wide range of mithais. From soan papdi to barfi, rasmalai and more, the list of the popular festive sweets go really long. And if you ask us, we love devouring it all, keeping our diet thoughts at bay. While some of these sweet delicacies are bought from the favourite sweet shops in town, some are made at home from the very scratch. Here, we bring one such delicious mithai recipe that will instantly tug at your heartstrings. It’s called lachcha rabdi. Creamy milk, cooked to perfection with dry fruits and some spices, lachcha rabdi defines indulgence. And the best part is, you can make it at home in less than half-an-hour. Sounds perfect; isn’t it? How To Make Lachcha Rabdi:

To make lachcha rabdi, you need full cream milk, khoya, sugar, ghee, elaichi powder, rose essence and sliced pistachio.

Start with boiling milk in a thick bottomed pan. Boil until it reduces to half the volume. Then add grated khoya to it and keep stirring continuously. Now, add some ghee and sugar and cook for around 10 minutes. Keep the flame low.

When the milk starts thickening, switch off the flame and add cardamom powder and rose essence to it. Bring the rabdi to room temperature and then, transfer to a refrigerator until it sets well.

Finally, serve it with a garnish of sliced pistachio; and you have a bowl of delicious lachcha rabdi ready to be relished.
